After that, he played for various clubs in his youth career, including Pro Juventude, Gragnano, and Torino, until 1999. On May 14, 2000, he made his Serie A debut, scoring twice in a 2–1 victory over Piacenza. Fabio was a Torino player from 1997 to 2005.

He then went on loan to Fiorentina and Chieti in 2002-03 and 2003-04, respectively. In 2005, he joined the Serie B team Ascoli, where he remained until 2006.

From 2006 to 2007, he was a member of the Serie A club Sampdoria. Fabio Quagliarella joined Udinese after 35 appearances for the club. He moved on to another club, Napoli, the following year.
